Very interesting recipe. I have used olive oil to make a cake once and loved the textural change. I will definitely give these a try. Thank you for sharing. Like you I have lots of olive oils that I use for different things. I found a peach olive oil that I made a vinaigrette to go on a salad but I also added some good peaches to the salad and feta.
